A stylish new chapter for an iconic culinary destination.
Ahead of the upcoming winter season, Da Vittorio St. Moritz reopens its doors with a newly conceived interior by renowned designer Carlo Rampazzi. This December, the restaurant will welcome guests into a reimagined space that honours the spirit and heritage of the house while reinterpreting it through a contemporary lens.
Since 2012, Da Vittorio St. Moritz – the Cerea family’s first venture outside Italy – has brought exceptional Italian cuisine to the Grisons mountains, where the Cerea culinary ethos has found a natural couterpart in the timeless elegance of the Carlton Hotel St. Moritz. The new interior draws on an enveloping and sophisticated colour palette. Shades of blue and red, soft textures, diffused light and carefully selected materials create a stage on which each dish becomes a veritable masterpiece. The space conveys a sense of balance and harmony, in visual dialogue with the alpine landscape that flows in through the generous windows.
The transformation also extends to the kitchen, which has been completely redesigned and expanded as part of a project launched in April. A portion of the restaurant has been incorporated into the new kitchen, providing Executive Chef Paolo Rota and his team with approximately 30 per cent more space. Developed in collaboration with Alig Grossküchen AG in Chur – specialists in high-end professional kitchens – the redesign was aimed at creating a functional, sustainable and finely tuned technical workspace.
With around 40 seats and a private dining room for up to 15 guests, Da Vittorio St. Moritz offers an intimate, inviting ambience ideally suited to celebratory dining.
Long-time Executive Chef Paolo Rota, brother-in-law of the world-renowned Cerea brothers, helms the kitchen. Working closely with the team at the flagship restaurant in Brusaporto, he continuously develops the menu while remaining true to the values that have long defined the Cerea family’s work: respect for seasonality, the pursuit of the finest ingredients and a deeply rooted culture of authentic hospitality.
Each year, the menu is enriched with fresh creations inspired by the alpine landscape. Highlights of the current season include turbot cooked in alpine Bergheu (mountain hay) with seaweed, melting beetroot with alpine cheese and truffle, and timeless classics like paccheri with a sauce of three different tomato varieties. While Da Vittorio’s maritime soul remains unmistakeably present, the restaurant also celebrates local produce. The result is a harmonious interplay that reflects the alpine landscape through an Italian sensibility.
Da Vittorio’s retention of two Michelin stars affirms its commitment to consistency and continual evolution, guided by a culinary philosophy that marries creativity with technical mastery.
While the service philosophy remains unchanged, its execution is subject to continual refinement: a balance between precision and warmth, poise and attentiveness. Every detail – from the table setting to the flow of service – expresses a long-held, family-led tradition of hospitality.
